This is an excellent poppy seed cake recipe. The photos speak for themselves. The only thing I can add is that strawberry goes really well with the poppy seed cake.

Preparation time: 100 minutes

For how many servings?:

Ingredients (8 slice per recipe. 1 serving = 1 slice.)

For the dough:
150 g butter
200 g castor sugar
2 ml brown rum
6 egg yolks
6 egg whites
200 g ground poppy seed
50 g plain flour
30 g starch
1 lemon’s grated rind
a pinch of salt

For the filling:
strawberry jam

Preparation

1. Preheat the oven to 190 C (374 F).

2. Beat the butter with the 1/3 of the sugar. Add the rum and the pinch of salt. One after one add the egg yolks. With the rest of the sugar whisk the egg whites until pale and stiff.

3. Mix the ground poppy seed with the flour and the starch. Add the 1/3 of the beaten egg whites to the butter-mixture, then add the rest; finally fold in the flour-mixture, too.

4. Grease and flour a 22cm (8,66 in) diameter cake tin and spoon the dough in. Bake it for 45-50 minutes in the preheated oven.

5. When cooled, cut the cake into half, and fill it thinly with boiled strawberry jam.

6. When the strawberry jam is cooled also, serve the cake with castor sugar and hot strawberry jam.
