Maglyarakas - Hungarian Jam Pudding

Another Hungarian excellence. A really filling, rich dessert. Everybody knows this delicacy, but who doesn’t, try it as soon as possible!

Preparation time: 90 minutes

For how many servings?:

Ingredients (12 servings per recipe. 1 serving = for 1 person.)

250 g milk loaf
200 g apricot jam

For the milk mixture:
500 ml milk
1 lemon’s grated rind
1 orange’s grated rind
1 tbsp vanilla extract

For the egg yolk mixture:
5 egg yolk
70 g sugar

For the stewed apple:
600 g apple
30 g sugar
1 lemon’s squeezed juice
1 orange’s squeezed juice
some ground cinnamon

For the egg white mixture:
70 g sugar
5 egg whites

Preparation

1. First butter a 23 x 33 cm (9,06 in x 12,99 in) diameter baking tray. Put aside. Take the milk loaf, slice then put the slices in a bowl.

2. For the milk mixture pour milk into a bowl, add the orange and the lemon’s grated rind, the vanilla extract and boil the mixture.

3. When the mixture is boiled, pour it over the milk loaf slices.

4. Beat the egg yolks with sugar, and pour it over the milk loaf slices, too.

5. Mix the milk loaf slices well with the milk and the egg mixture, and place them evenly in the buttered baking tray.

6. Peel the apples, slice them, and stew them under a lid, on small heat, with the lemon juice, orange juice, sugar and cinnamon.

7. Place the stewed apples in the baking tray, on top of the milk loaf slices. Bake it in the oven for about 20 minutes, at 180°C (356°F).

8. When ready, spread it with half of the apricot jam.

9. Prepare the egg white mixture. Whisk the egg whites with the sugar and a pinch of salt until very stiff. With a wooden spoon, very gently, stir the rest of the apricot jam in the egg whites, in a way that the mixture remain "striped".

10. Spread the egg white mixture on the top of the apples, "thorn" it, sprinkle with castor sugar, and bake it at 170°C (338°F) for about 10 minutes.

11. Slice it into squares and serve.
