Curd Dumplings
Every Hungarian has eaten curd dumplings, and I don’t know one who doesn’t like it. Some like it plain, some with a lot of sugar, but the result is the same: there will be no left! Let’s prepare it! |

Preparation
1. In a bowl combine the cottage cheese, wheat-meal, egg yolks, and a pinch of salt. Stir it well with a wooden spoon then cover it with cling film and leave it to rest for 2 hours, so that the wheat-meal can become soft.
2. While the wheat-meal softens, sauté the bread crumbs a bit in a frying pan, then put ii aside.
3. When the wheat-meal mixture is ready, whisk the egg whites until very stiff and in small portions fold in the wheat-meal mixture.
4. In a pot boil slightly salted water and fix the power of the heat for the water to stay constantly boiling.
5. With wet hands form dumplings from the mixture and put them in the boiling water.
6. When the dumplings come to the surface of the water, they are ready. Take them out and roll them in the sautéed bread crumbs.
7. Serve it with sour cream and, according to taste, sprinkled with castor sugar.
